New Recipes...


So while pregnant I cooked...

0 times!- Seriously!

I enjoy cooking and am back! I think the husband is thankful! I love to play music and drink a glass of wine while cooking... but I am getting tired of the same ol' recipes. We are big chicken eaters around here and so I am trying to spruce the recipe book up... I would love some suggestions. And please... no recipes where it takes twenty ingredients and half I have never even heard of!

So, share away... PLEASE!

This is mine and my hubby's favorite Chicken Casserole: 1 8oz. package of cream cheese, 1 can of cream of chicken soup, 1 sleeve of Ritz Crackers, 1/2 stick melted butter and 4 cooked chicken breasts (shredded or chopped.) Here's what you do: Mix room temp cream cheese and soup together and add in chicken. Spray a casserole dish with Pam and pour in mixture. Pour melted butter over the top and crush up entire sleeve of crackers, crumble on top. Bake at 350 for 20-25 minutes until bubbly! This is easy and really good and I usually serve this with rice.

    All of my recipes are super easy to make with normal ingredients. Try the Imperial Chicken recipe with my alfredo recipe, the Chicken Parmesan, and the Buerre Blanc Chicken with the Herbed Mashed Potatoes...they are all very yummy!!!

  4. I will start by saying I am not a big fan of cooking chicken, but this recipe has won rave reviews:

    Bruschetta Chicken Bake

    14.5 oz diced tomatoes, undrained
    2 cloves garlic, minced
    6 oz Stove Top Stuffing Mix for Chicken
    1 1/2 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
    1 tsp dried basil leaves
    1 cup Kraft shredded Mozzarella cheese

    Preheat oven to 400 degrees F. Place tomatoes with liquid in medium bowl. Add garlic and stuffing mix and 1/2 cup water. Stir just until stuffing mix is moistened. Set aside.

    Place chicken in 13 x 9 inch baking dish and sprinkle with basil and cheese. Top with stuffing mixture. Bake 30 minutes or until chicken is cooked through. Makes 6 servings. YUM.
